In pursuit of layers.

After nearly 20 years of working as a chef—including time in Michelin starred restaurants and 5-star hotels as a head pastry chef I realized my greatest passion wasn't in complex plated desserts (i do still love an intricate dessert!), but in the humble magic of flour and butter.

Crois is the result of that realization.

As a small, independent bakery, I focus on the two things that require the most discipline: laminated pastries and sourdough bread. My goal for Crois is simple: to settle into a rhythm of excellence. By perfecting the base products today, i am building the foundation for the creative, boundary-pushing bakes of tomorrow.
